Recipe: Tempura Battered Oysters

Nothing says passion like oysters, so warm things up a little this Valentine's with this recipe for Tempura Battered Oysters...

Just add a bottle of fizz and this simple yet succulent recipe courtesy of Executive Head Chef, Kevin Clark, at The Mere Golf Resort & Spa, will get pulsing racing! 

With caramelised lime and pickled ginger

Equipment

  • 1 x small mixing bowl
  • 1 x fry pan
  • 1 x fryer filled with clean oil
  • 1 x slotted spoon
  • 1 x tray
  • Kitchen roll
  • 1 x fork

Ingredients

  • 6 rock or Colchester Oysters freshly shucked (your fishmonger should be able to do this for you)
  • Soda water
  • Rock salt and freshly milled black pepper
  • Tempura batter flour
  • 1 x fresh lime cut in half
  • Pickled pink ginger cut into very fine strips
  • Bottle of pink champagne (optional)

Method

  • Place the oysters on a tray and dab with kitchen roll to dry them slightly
  • Switch the fryer on to 180o
  • Place the pan onto the heat, then add the two lime halves flesh side down and gently dry fry till they are golden, when done lay to one side out of the pan to cool
  • Take the mixing bowl and add 3-4 tablespoons tempura mix
  • Slowly add the soda water mixing with the fork gently as you don't want to knock the bubbles out of the soda water till you get a smooth thick creamy consistency, if it's too thick, add some more soda water, too thin then add some more tempura flour
  • Drop a slight ball of the batter into the fryer to ensure it is at the right temperature
  • Drop the oysters into the batter mix ensuring they are coated
  • Carefully hook the oysters out with the fork and lay gently into the fryer ensuring you don't drop them in, but lay them into the oil away from you
  • Fry for 2-3 minutes till lightly golden
  • Remove with a slotted spoon and place onto some clean kitchen roll
  • Pour two glasses of chilled pink champagne
  • Place the oysters onto a plate, gently squeeze the lime juice onto them and finish with a pinch of rock salt and freshly milled black pepper, and finally top off with the pickled ginger.
